It's perfectly fine for her to be on the ship when you get the NOA2. The NOA2, the hardcopy, is sent to you, the petitioner. Then you can start to gather the documentation she will need for the interview, like the affidavit of support and supporting documents.

There's no way to get the NOA2 to wait - it's an approval on a petition that's out of your hands to control. And even on predictions, it's not very good to base decisions on those because it can all change soon. Once the NOA2 is issued, like I said, the packet will be sent to the NVC which will then forward it to the Embassy. She can still be on the ship while all this is happening, and once she gets back home, she can start preparing for the interview straight away. Of course different Embassies do things differently, so I suggest you read up on reviews and posts about Colombia to know how things get set up, but until the packet reaches the Embassy, she is fine to be on the ship.

The petitions do have an expiration date, which the embassies can extend for up to a year in 4 month periods. So, you will most likely have plenty of time for her to get back home.
