My wife (petitioner) & I (beneficiary) submitted everything (i-130, G-325A, G-1145, I-765, I-864, I-485) last week....My H1B is now expired and just waiting for my EAD. As you may know they generally issue a drivers license to the date of your H1B. Based on the online tracking our I-797 (Receipt Number) shall be in our mailbox in the next few days.

Can I use the I-797 to renew my license? If so, how long will the license be valid for?

If not, what do I need to get a license renewed?

I checked my states DMV website and it lists it as an acceptable document to prove identity for a license. I'd check there.

You didn't tell us what state you are in. Most likely you won't be able to renew your driver's license until you get your EAD.

I am located in the state of Missouri.

According to http://dor.mo.gov/pdf/idrequirements.pdf

Applicants for adjustment of status
YES
Immigration documentation indicating status, and One of the following:
• Employment Authorization Document I-688B or I-766
• Passport

It's unclear, but one can interpret it as saying you may be able to renew it. You are an "applicant for adjustment of status", and you can provide your passport and the I-485 receipt, which is "Immigration documentation indicating status" (the status that you are an "applicant for adjustment of status" anyway).
