My H1B is expiring tomorrow (10/30) and I am planning on sending my whole AoS packet tomorrow. Will that be to late and should send it today (10/29) or the moment the packet is sent you are good. I appreciate your help.

What is your I-485 package based on?

Your being "good" only happens when they accept the package for initial review and give you a NOA1. The repercussions of that depends on how you qualify to file AOS.

I've married my long time fiancee a few weeks ago. I am filing all application at the same time (I-130, I-485, I-693, I-765, I-864 and G-325a for both of us, and G-1145).

I appreciate your feedback. I was told the moment the packet is submitted you are good to extended your stay, is that true?

The moment your package is accepted for initial review you will be authorized to stay. That can take up to a month after you mail off the package.

But that being said, any overstay is forgiven/irrelevant for spouses of US Citizens who adjust in-country. Don't let any prospect of overstay bother you because it won't matter, for you. Good luck.

If your long time fiancee is US citizen, it is really irrelevant when you send you package. Any overstay will be forgiven, you will be unable to legally work until you get your EAD, so wouldn't be too stressed over the date of sending a package out. Your authorized stay begins with NOA1 date anyway, so you will have few days between your H-1B expiration and NOA anyway.
