If you need a new UK passport in the US, some help from us

AOS name does not have to match the passport name. Ladies apply in a new married name every day with a marriage certificate. While yours is a little more complicated, a document proving the name change ought to work for you also.

I have a VJ friend who wanted to change her middle name (as well as her last name) on her AOS application. It wasn't any combination of her maiden name. She wanted a totally new made up middle name. USCIS told her she could only do that if she got a court name change before she applied for AOS. Sounds like what you plan to do.

You should apply for a SSN in the old name. They have to find you in the SAVE database exactly as you entered the US. Your I-94 printout will be generated by your passport scan. You can apply as soon as you arrive and before marriage. Then once you get changed by immigration to a new name (EAD card or greencard), you can go sort the name change with the SSA. They will find you in the SAVE database at that point under the name on your latest USCIS document.

Are you processing in London? They will accept your deed poll. Have you considered using your new name on the DS-160? Or at least asking at the interview if your visa can be issued in the name on your deed poll? Not sure that would work, but worth asking about. You are with the Dept of State now and kind of a new process from USCIS and the petition. Explain you have used the name since ____ and only used the old name on the petition because Belgium would not change your passport. Ask specifically if you can apply for the visa in the name on the deed poll even if it does not match your passport or the petition approval notice.
