Moving

We still have yet to receive our NOA2, but I found out today that there is a chance I could be moving from Texas to Arizona
I am wondering what kind effect this could have on our K-1 process.

Could it delay it and would it move it to a difference processing office or would it still be the one in Texas?

I don't think your case would be transferred to a different service centre, and I doubt it would be delayed by very long, if at all, but you would need to put in a request to change your address. There's an option to do it online: https://egov.uscis.gov/crisgwi/go?action=coa if you are the USC. You'd need to make sure they had your new address in case the NOA2 is sent to the wrong address. The NOA2 hardcopy is needed for Adjustment of Status later on and there is an exorbitant fee for getting a replacement.

I was just curious and a little worried since it looks like I will be having to relocate.
