What if you applied DCF - were approved (I-130) and the petitioner/sponsor returns to the USA. Does information/documentation to establish domicile) need to be submitted with the I-864 for the spouse's interview?

Generally speaking, yes. At the interview, they may ask to see some evidence that the petitioner has maintained a domicile abroad (or is intending to re-establish one).

When submitting these domicile documents, has anyone wited-out or blacked out the account number on bank statements or credit card statements? i am about to submit and worry about my personal info flying all over.

Husband's interview is scheduled for Jan. Can I send my signed and dated (Nov 2013) to him now in case a spot open up or is it 'too early'? I have all the paperwork to go along with the form.

Just double checking there is no 'expiry' date for the 864.

if my wife is back to US already in the fields mailing address and resident address shall we include the american address and still provide proof of US domiciles ?

Or we should keep the mailing address still in Italy because it's where we receive the i-130 NOA 2 ??
