As soon as the lovely lady at the US Embassy in London told me my K1 visa was approved, my brain completely shut down and I have no idea what she said to me. Awkward.

I really just want to know if I will receive a text message the day before my Visa will be delivered to my house? And does it have to me in person that will need to sign for it?

You should get an email from the courier with a tracking number and delivery date.

And yes, you will have to show an ID and collect the visa yourself when it is delivered. Unless you put it in care of someone else when you made the delivery arrangements.
