Bram (Belgium) and I (American) applied for the I-129F petition, which was approved. We decided to request an extension, which gave us another four months to get interviewed, get medical exams, etc. However, our plans changed and our petition has expired six months ago. We still plan to marry and be together and would like to continue this process. We are not sure if we are able to continue our previous petition or have to start a new one? Are we able to do either of those options or is there a different route to take to get married?

I'd say try to contact the embassy with your case # and discuss it with them. For ours in South Korea the case could basically idle there for up to one year. Not sure about other embassies. I'd suggest calling the embassy directly because chances are it could vary by location.
