If so, in that interim between surrending the EAD and receiving the green card, what do you show to a prospective employer to prove you are legally authorized to work?

Make a copy of the EAD? And say you will show your green card when it arrives?

Don't bring the EAD to the interview. They can't take what you don't have.

If you know you are going to be starting a new job within 2 weeks of interview as the officer for the I-551 stamp in your passport...

You dont have to show evidence of employment authorization until you actually start a job and then you have 3 days to produce it...

You are required to bring your EAD to the interview, if I read the notice correctly.

Show them you are starting a new job in a few days so need the EAD or a stamp.

Wes is in the process of applying for a decent job. He likely won't whether he is hired before his AOS interview this Thursday. That's why I'm wondering about this.

You should have an I-551 stamp in your passport if the AOS interview is successful. That shows a prospective employer that you have been approved for a Green Card. Just make sure that you get Wes's passport stamped.
