Once the I-130 is filed, is it an issue if my spouse and/or I move away from our current country of domicile? Is it just a matter of notifying the USCIS of an address change for each of us?

We are both legal residents of a small Caribbean country right now, however all immigration matters are handled through the US Embassy in Venezuela - not a place my spouse or I are keen to travel to (he is British).

I will likely go back to the US for work while the I-130 is being processed, so that I can satisfy the Affidavit of Support requirement. When I do that, my spouse is thinking about returning to the UK to wait out the approval process with his family. That way he can do his interview with the Embassy in London.

Has anyone else changed countries during the I-130 process?

It's perfectly fine for you to return to the US after filing the I-130 and it's also perfectly fine for your spouse to return to the UK. You will not need to notify USCIS of his address change, you can do that once the NVC has the file to ensure that it will be routed to London instead of Caracas.
