AoS: Assets to cover Income difference, Whole-life insurance

Basic situation: Entered US as F-1, still in status. Married US citizen wife in 2010. Plan to have concurrent filing in the US.

My sponsor and co-sponsor's total income is marginally lower than the 125% poverty line limit, so I decided to use my asset to make up the difference. The problems being:

1. Sponsor is my wife and the co-sponsor is her mother. So my asset should make up to 3X, or 5X, of the difference?
2. I am planning to list my whole-life insurance policy as my asset to cover up the difference. I know the policy has a cash-out value that should be more than enough to cover this difference. But what should be the appropriate documentation for that? Would a yearly policy statement that states this cash-out value suffice, or I would need to make copies of the entire policy booklet?
3. While my income is not valid for Public Charge purposes--it's stipend for my PhD program and I'll graduate in a few months--should I give evidence for that anyway?

I don't need to ask "them;" the policy has a page which lists what would my surrender value be (in % of coverage amount) at the end of xth year of the policy (assuming of course I have paid the premiums). My question is, rather, whether a statement from the insurance company stating what the current surrender value is is enough to establish this as an asset, or do I need to make the photocopy of the entire policy?
