I used Historian a few years back. I am not sure if it still works. After download all my chats, I put into Word back then into my Google Drive. We do most video calls and I took print screen to proof we did video calls.

And also, if your boyfriend is divorced do not forget to include his divorce decree. My fiance and I don't have ones ensembled into the I-129F since both of us are never married.

I made a screenshot of a piece of conversation together with the date on top (I did 1 for each month) and I did 3 years worth. Although what I did might've been a little too much lol.

The GUIDE here on VJ for the K-1 visa has everything listed that you need.

Beneficiary (you) will need to complete a G-325A (sign and date), a Letter of Intent (sign and date), and a 2X2 passport photo (white background) then send this all to your fiance (petitioner)

Skype log or other evidence of an ongoing relationship are not needed for the I-129F petition. Those will be needed at the embassy during the visa application a few months down the road.

For now you need to provide evidence of having met within the past two years.

You do not need a great number of conversations or chat logs. Just a few good one's should do the job. You can maybe print one for every month you have known each other, or 1 for every week. Either way, it does not have to be a great number of them. USCIS is just looking for proof of the ongoing relationship, not the quantity.
