Visitor/Transit Visa while processing K-1 Fiancee Visa

Hi everyone,
I have sent the K-1 Fiancee package to the USCIS Dallax Office based on the guide on VisaJourney. My fiancee is from Russia. I have some question regarding the K-1 Visa and Visitor/Transit visa while I am processing the K-1 Fiancee visa.
On the I-129F form, I left in blank the part of Middle Name. She is Russian and she has patronymic name. On her international passport, it only shows her first name and last name in roman letters and her full name in Russian language (including her patronymic name). I put her patronymic name in the section to write her name in the original language. I know that patronymic names cannot be translated.
Will my application be rejected for not including her patronymic name in english as middle name or given name?
I just sent the documents last week. I know that is going to take like 5 months to be approved. It is a long time. We are planing to visit my country (Ecuador) in the last two weeks of December. We want to travel together, to do this, its better if she comes to the US with a Visitor or Transit visa so we can flight to Ecuador together.
Can she apply for a visitor/transit visa to the US so we can travel to Ecuador while the K-1 is being processing? or what will be the best option?

9/30/2013 - USCIS Case status - Alien Registration Number was changed relating to your I-129F, PETITION FOR FIANCE(E). by email

10/18/2013 - USCIS Case status - We mailed a notice requesting additional evidence or information in this case I-129F PETITION FOR FIANCE(E) by email.

10/24/2013 - Recieved a RFE Letter - Request for evidence - Two year meeting requirement.

I am not experienced with the first section of your question..... I am sure that she will be able to apply for a visa to enter the USA.... but I am not sure what are the approval odds of that based on her job, profession, ties in the US and Russia... etc.... however, why don´t you guys fly to another country and meet there and fly to Ecuador?? Maybe Mexico? Colombia? Panama? Canada? (maybe Canada is a better option since it is closer to you) but then again, you need a visa to enter Canada...

Yeah, I was thinking the same. It is more likely that I'm going to travel to Russia then fly together with my fiance to Ecuador, 1 stop in Madrid then to Ecuador. So this is my plan: round trip to usa-russia, round trip russia-ecuador (Stop in Madrid). I am concern about passport control in each country. Do you guys think i will get any trouble with immigration/passport control? Will allow me to enter the country? Will they question me?
