I am curious. If my fiance is able to get out here early next summer, but we do not get married till the end of the summer, can she work in that period? In what I've been reading so far, it seems that until we get married and apply for change of status, that she is unable to get a job. I do not know for sure, but she is currently here on a J1 VISA and I believe she already does have a SSN. Or is it when she comes back she gets a different, more permanent, SSN?

No, she can't. She needs an EAD, and it takes 90 days to process and expires when the I-94 does. So it's useless.

After you marry you will file AOS and you can get an EAD for free then that is good for a year.

AOS for my husband
8/17/10: INTERVIEW DAY (day 123) APPROVED!!

ROC:
5/23/12: Sent out package
2/06/13: APPROVED!

The SSN is hers for life. The number will not change, but she cannot work with just an SSN. She needs the EAD to go with it, which you apply for at the same time as you file for AOS.
