Hey everyone, thanks so much for the advice, it's been a huge weight off my mind. I just have one more question, now that it looks like we'll be going through with this with a joint sponsor.

While waiting for the K-1 to be approved, am I basically free to go wherever I like (except for the U.S., of course)? I know eventually I'll have to be back in my city for the interview at the consulate, but do I have to be in the country when they contact me for this?

Thanks again

You can go wherever you like, INCLUDING the US (to visit).

The consulate (it will be Sydney, not sure if that is your city or not) will contact you by email, once the I-129f is approved and the case has been forwarded to the consulate via the NVC.

And another question!

In the hope anyone reads this, we're filling out the I-129f now, and have no idea whether to list my fiancee's current address in Australia, or her old American address (since the petitioner seems to already be in the U.S. in most cases).

Thanks!

If she is living in Australia you should put that address. There is a chance that this will make the process go faster (when petitioners are living outside the US, sometimes the process is expedited).
