As I read through the AOS guides it lists the I-131 supplement. Is this really necessary to complete and file with the AOS?

No - it is not necessary and not required but i advise you do. This is the mistake my husband and I made. We are traveling outside the country end of Dec this year, and we submitted our AOS application end of november last year. We assumed that we would get his green card by May-June the latest but we did not. Our application is still under "Acceptance" status and it has not moved. We then had to apply for AP - i131 so he can travel outside the country and come back.

It is free, and even if you may not need to travel anytime soon, I highly advise you to file for it.

Same thing for the I-765, work authorization.

Your AOS case may take a year to be processed. You may be happy to have temporary work and travel authorization while waiting for your green card.
