The K1 visa is a good way to go. If she only jsut started her one year, it should be done by the time her Canadian visa is done.

Yes, as long as she is legally resident there. If the K1 visa process (or the CR-1 spousal visa, if you choose to get married first) takes longer than her one year visa to Canada, you can have the case transfered to wherever she will be travelling to next.
