My fiance and I met only once and then decided to apply for K1 visa after..please check my timeline below, my concern is how much percentage do applicants for K1 have when they have only met their fiances once yet within the 2 year requirement?

Any couples out there that were approved with this kind of situation?

Not a problem at all. Most fiances would have only met once because not everyone has the liberty to go back and forth in 2 years. Once within 2 years is enough and is the least required by the USCIS so do not worry about them rejecting you just because you met once. Welcome to the club Good luck!

It could be a problem at the consular stage. Time spent together in person carries a lot of weight in the eyes of the consul.

It could ba a red flag, but as long as you have no other flags and the evidence of a bonafide relationship is strong, you shouldn't have a problem with the Manila embassy.

Agree with Leon and Mylen. Country and Consular specific, after the basics are covered, don't listen to rumor seek the information your self. Lots of us met only once, it is what you do after that to support an ongoing relationship.
