If my fiance (Benneficiary) wants to change jobs while we are waiting for NAO2 do we need to update the biographical data or would it be better to stay put and continue waiting for this process to finish. Lord knows that they are slow enough with processing papers so I would hate to cause a delay that could be avoided.

At this point it is a non issue. I would do nothing. If a question arises during the interview process or before then you can explain the job change but it's really not important.

Beneficiary can change jobs. They are not even required to have one. The information only needed to be correct on the forms at the time you filled them out. Current information for the beneficiary will be on the K-1 DS application forms they will fill out for the interview.
