worried about the letter of employer

my fiance (the petitioner) is a union boilermaker he doesnt have a permanent employer he works for multiple employers through out the year, sometimes as many as 5 or 6. we are worried about the letter of employer.Will pay stubs. Tax returns and a letter from his union hall be sufficient?

The tax returns show his income. The union hall letter should be sufficient provided it details his continued work history and future work history. Also, the letter of employment

Embassy is more interested in the most recent tax return and W-2 (s) , as long as his income meets or exceeds the poverty guidelines all is good. The employer letter is a "MAY" include item, not required. Including current pay stubs will work just fine. And no issue including a letter from the union.
