So my fiancée lives in Ecuador and a one way plane ticket for the date she wants to fly would cost $800; but, I found a "round trip" for $350 but as you know this is only a one way trip :)

My question is, if I buy the round trip ticket which stars in NY to Guayaquil(obviously she won't take that fligh) lol and one week later, Guayaquil to NY, will there be problems at the airport or customs because she never took the first flight from NY to Guayaquil.

Is my idea good or bad? Will I have problems, or will it work?

That won't work. If she doesn't use the first/ outbound flight, the rest will be cancelled. You CAN buy a return flight starting in Equador, and not use the return portion.

Yes she's right. You have to fly your tickets in order, doesn't matter if you leave a last routing untouched but if you don't take the first one, for the airline you didn't attend and therefore your return will be canceled.

Thank for the idea guys!

I will then buy a round trip flight leaving from Ecuador to NYC and then NYC to Ecuador.

My only concern was that the immigration officers at the airport would give her a hard time with questions such as "why do u have a round trip ticket huh huh huh" lol

But if some of you have done it because is cheaper than one way(which it doesn't make sense but it's true) then I might just do that :)

Thank you.
