Hey I was just wondering if you already have a Social Security Number and Card from a previous Visa to the US, do you need to reapply for a new card/number once in the US on a K-1 Visa, or can I go ahead and keep/use my old number?

Yes she will keep it for life. Visit any SS OFFICE after receiving green card and they will issue a new card without restrictions ...

I was wondering the same thing. I got a Social Security number 5 years ago when i had a J1 visa becuase i was working on a US summer camp. This was through CCUSA who organised a social worker to set us up at orientation. I never actually needed to use it but wondered if it was still valid or if i will need to get a new one due to why/how i got the first one and the circumstances. Is there a way to check it and any guidelines attached to it possibly?

Yes you can still use it. SSNs don't expire or become invalid. In fact you're not supposed to get a new one if you already have one. Doesn't matter if you got it on a J1. It's still fine.
