I have 3 part time job two of them are considered temporary. Last year may income was 21,650 and I am single no dependents is that enough for K-1 visa? Also, If the job are temporary could be a problem? For K-1 visa should I feel out I-134 or I-864? Could I use the check stubs and the last year tax return as evidence of income or i need employment evidence letter from all 3 jobs?

You use the I-134 for a K-1. Yes, that is enough for a household of 2, which needs a little over $19k. The jobs being temporary could be an issue for the CO, but it might not be. It is all up to them. Are you providing documentation that they are only temporary? If not, they may not even know they are or ask. However, do you have other job plans lined up for when the temporary ones end? You will still need to have enough income for the I-864 when it comes time to file for AOS.

Letters from your employer are not a requirement, unless your consulate specifically asks for them in their instructions. Recent pay stubs from all 3 jobs and your most recent tax transcript should be enough.

Employer hired me as temporary in order to not pay benefits. At one job I am working since 2006, a the other one for one year. And for the part time permanent one since 2002 .

Ah, then they are not really temporary. You should be fine with your income and amount of time at the positions.
