So I got my EAD a couple days ago ( hooray for me!), I am probably mistaken but I feel like I read something that said once I have my EAD I need to go and update my SSN is that correct ? or would that be a thing I would need to once I have my GC ?

Not now. The SS card you have now says “VALID FOR WORK ONLY WITH DHS AUTHORIZATION”: to gain employment you need to show it along with your EAD.

After you receive your GC, you should have your SS card replaced with one without restrictions http://ssa.gov/ssnumber/cards.htm

The SS number will remain the same - once you get one, it's for life.
