I am a US citizen petitioning for my spouse. My spouse’s interview for CR1 will be in Mumbai Consulate, India. Can I attend the interview along with her or at least be within the consulate premises? Any experiences?

Nope, Mumbai Consulate does not allow.

But they may have lounge for American people, but this may not be option when they are allowing applicant to enter into the Consulate, as they are really really busy at that time.
