Concern about affadavit of support in K-1 Visa Interview

Hey, I'm a Canadian and my Fiance is American. She doesn't have a job, and so she doesn't meet the minimum requirements for the affadavit of support. However, her mom more than meets the requirements, and can file as a co-sponsor, and I have like, 20,000 dollars saved up that I can show, establishing I won't be a charge of the state. We are allowed to stay at her mothers, constituting free rent. Should I be comfortable with this? Should my girlfriend get a job? We are living together at my hometown, while I am working so I can save up a lot of money for when we move to the states.

On another note, how long do you traditionally have to wait before you are allowed to work after arriving in the states on a K-1 visa?

Have you looked into getting married and then filing for a CR-1?

The benefit to that is you can work right away when you cross. Also, because you are legally able to work in the US, you can collect Canadian EI if you are unable to find work right away.

You could do a quick wedding in Canada, file, then have a ceremony or celebration with her family when you move down.

With the K-1 you would marry after POE (within 90 days of entry) and then you apply to adjust status, along with advance parole and EAD. This can take 2-3 months from my understanding. You would apply for EI from Canada within the 30 days of quitting your job, but you cannot start collecting until you get the Employment Authorization.
