Worried about amount of evidence for Affidavit of Support

I am just getting ready for my interview at the London embassy and I am a little concerned I may not have enough supporting evidence for my I-134 Affidavit of Support form. My fiancée has sent me her 2013 IRS transcript, letter from employer, and bank statement showing savings but because she only earns around $15,000 per year we also have a joint sponsor.

The joint sponsor has sent me her W-2 earnings summary for 2009, 2010, 2011, 2012, (2013 is not available) several recent bank statements which indicate her monthly salary and name of employer, a statement showing her retirement account and another statement showing her investment account assets. I have read the guide on this website, but I am unsure whether this will be sufficient evidence? I am just concerned because I do not have a letter from her employer?

That sounds like plenty! London is extremely lenient in their requirements for evidence of financials for K1 (which I assume is what you're doing if you're completing the I-134). They've been known to accept only pay stubs as proof of income for the I-134, so you've got more than enough.
