Looks good. Most Filipinos eat tortang talong only for breakfast. She used key lime for the pork chops and not calamansi? That's a smart substitute. good.gif

You have to use what you can get. We're always buying key limes as a calamansi substitute here. I've never seen true calamansi here.

I also ate the left over tortang talong for lunch yesterday. My wife had planned on having it, then told me to take it.

I also ate the left over tortang talong for lunch yesterday. My wife had planned on having it, then told me to take it.

A few years ago, I found a Seafood City Supermarket location that was selling calamansi so I bought one of the pots. I cultivated it until it started to bloom. Here's a photo of that calamansi in my old balcony. I decided to leave the plant behind when my husband and I moved back to the Westside.

We had grilled cheese... but it was on a george foreman griddle. Used pepper jack instead of cheddar. Fresh veggies on the side.

I threw some beef round steaks in a marinade of orange juice, onion and pecan rub for a few hours. Then my hubby grilled them. I stuffed some jalapenos and some mini bell peppers with a mixture of cream cheese, onion, oregano, cheese and garlic powder. My husband grilled those too. I also put some corn cobs on foil, brushed them with butter, sprinkled them with some salt and pepper, threw in some chopped onion and squeezed a little lemon juice on them. Then I rolled them up and baked them in the oven. Everything was yummy!

Interview was easy. My hubby's Oath Ceremony is scheduled for February 25th. I can't watch >sad< but happy he is getting his certificate!

Chicken thighs grilled indirectly for about an hour so the meat almost falls off of the bone. I seasoned a couple with McCormick's Roasted Garlic and Herb seasoning, one with Old Bay seasoning, kosher salt and garlic powder and one with kosher salt, ground red cayenne pepper and paprika. Saffron rice, homemade beans and corn to complete the meal. I was hoping to do grilled pineapple for desert, but it isn't ripe yet.
