We had tortang talong and grilled pork chops last night. Tortang talong is the long eggplant, first grilled then smashed open, soaked in beaten eggs, then fried with previously cooked and seasoned ground meat, we used ground turkey yesterday.

The pork chops were marinated in soy sauce, key lime juice and pepper. Then slow grilled with repeated applications of the marinade.

Tortang talong looks like this although this isn't the ones we made.

We're moving Saturday so i'm refusing to cook atm even though I have food to cook.

I've just been too lazy after packing.

And we're settling in my parents house, so there will be real meals come sunday.

I bought some veggies today so we can have real food for supper. I"ll finish my grocery shopping off this afternoon. We need more chicken and beef and I would like some more perogies. Oh and mushrooms, hubs likes mushrooms.


Last night was the left overs, KD with tomato, onion, ground beef and italian seasoning. I added italian shredded cheese mix for giggles. Maybe tonight should be chicken or turkey burgers? I gotta find some ground chicken.

Porterhouse steaks on the grill, with mushrooms and onions, salad and corn on the cob was last night.

Tonight is pork chops(bone in) on the grill, salad and more corn on the cob.

Timeline

This is a dessert, but I never heard of it before, so I wanted to share. We had summer squash stuffed with chocolate and fruit and baked on the grill. Next time I will put less chocolate and more fruit. You can use any fruit like strawberries, apples, pears, other berries, etc. Let cool slightly (but still warm) and add whipped cream (optional). You can eat it with your fingers like a sandwich (taco style) or with a fork. It was yummy!

Interview was easy. My hubby's Oath Ceremony is scheduled for February 25th. I can't watch >sad< but happy he is getting his certificate!

Looks good. Most Filipinos eat tortang talong only for breakfast. She used key lime for the pork chops and not calamansi? That's a smart substitute. good.gif
