How long does it take from "case completed" until the interview at the embassy?

Hi,

does anybody know how long on average it takes from the case completed at the NVC until the actual interview date at the US embassy overseas?

Depends. On average about 2-3 weeks after your case is complete NVC notifies you of the interview date, which depending on the country, is generally 1-2 months after the notification date.
