Italian wife in UK waiting for approval qstn

Hello, I'm an American with an Italian wife who lives in London. We've received our NOA1 and are waiting on approval to submit the I864 though the US consulate in London. I will need to move back to the US next month to start a new job. In the meantime, will my wife need to continue to stay in the UK until she gets her interview? Or can she move back to Italy where she owns a flat and wait it out there (thereby saving us months of rent)? Or will she need to stay here and have a UK address while she waits on her approval?

She can move back, and interview anywhere she is legally resident. Moving may cause a slight delay as your paperwork is sent from one embassy to another.

so we'd just alert the UK embassy if she was moving back and they'd forward any correspondence to the Italian consulate?
