Are collard greens spicy/peppery? I tend to not like greens because I find them too hot.

well, kale is my favorite... i can eat those just steamed w/ a little lemon juice squeezed on them. collards are less bitter than mustard greens, but for some ppl, they're all an aqcuired taste. to me, none of them are really "spicy/peppery... but maybe that's what i'm calling bitter.

There are actually several kinds of greens. Greens just means that they are the green leaves from some plant. Down here they eat collard greens, mustard greens, and some even eat dandelion greens. Collards are just my favorites. Thanks for the ideas Noura, I'll have to try them. For now I don't have time to cook any because it is so time consuming to wash the sand off of each leaf and enough for a whole mess (pot) of them takes forever to wash.

They can be pretty bitter, which is why I liked them cooked with a whole pound of bacon, simmered all day on a low flame. That tenderizes them enough and takes away the bitterness that I can eat them. My grandpa used to grow them, but now that he's passed I have to buy them, and nothing tastes quite like grandpa's greens.

yes, it does take away most of the nutritional value - I can't stand overcooked veggies! I'm not sure if I've had dandelion greens before, but I think I have - also in a salad. If you haven't tried kale - you should - it is deeee-lishious! When I go on my sufi retreats, we either fast or eat totally vegan for cleansing purposes and we do a lot of kale - i absolutely crave it sometimes! I also try to be a big "green eater" b/c of my anemia... got to get that iron in everywhere and most greens are so high in iron.

When i was growing up green veggies (well all veggies) were so overcooked. I always hated vegetables. As an adult I learned to cook fresh veggies and it makes all the difference in the world. I still prefer my greens raw- my favorites are spinach and arugula. I eat vegetarian about 50% of the week and its amazing how wonderful it is when you know how to prepare these kinds of vegetables.

I don't argue that it doesn't take out the nutrition, that's for sure. I can't really think of one traditional southern food that is healthy. I think my favorite southern thing is biscuits and gravy, and that is totally unhealthy. I try not to eat southern any more than I have too (like at family events).

Does anybody else have Logan's Roadhouse in their area? We went there for lunch yesterday while we were out shopping and it is so healthy! We had grilled salmon and shrimp, zucchini & onion kebabs, and steamed broccoli. The only thing not healthy was the onion petals (like onion rings but meant to be more like the blooming onion).

I think this is the smart way to eat. never deprrive yourself of favorite comfort foods, but eat them as if they are special. :thumbs:

oh yeah, i have a handful of comfort foods that I wish I could keep by my side at all times! i luvz my cumfert foodz! lol...they should be called "uncomfort" foods since the more you eat, the more uncomfortable you become lol :lol:

yep yep yeppers...if I could only indulge myself once a month i'd be ok...but lately i've needed a lot of comfort...tis the season...to indulge lol
