Prep in anticipation of NOA2/ I-134 Questions

Timeline

It's been 4 months since we submitted out I-129f, so I'm trying to be ready for the next step. I don't want any delays on our side, since US-CIS already makes it slow enough.

I've spent the last 6 years working in China (where I met and have lived with my fiancee) and thus I 1) don't have any pay stubs for my time here, and 2) even if I had them, I'm earning about half of what they require to be able to sponsor her visa. I'm searching for a job back in the US, but there's no guarantee I'll be employed by the time I need to provide evidence of my income. My parents have offered to support as in every way possible so that leads to my first question:

Does the US consulate in China accept third party sponsorship on these types of visas? We've worked so hard to be able to move to the US, I'd hate for us to get screwed over by the crappy job market in my hometown.

In guide for preparing for the interview, it offers suggestions of what evidence you can provide of interaction with my fiancee in the time between submitting the application and her interview, but I don't have any of that. I don't have the receipts from my plane tickets to visit her during the Spring Festival, and all of our communication is either text messages or on QQ (a Chinese instant messaging service.)

Would printing out our chat history be enough evidence?

2013.1.7- I-129f mailed to Texas Lockbox (with correct fee this time--> Delivered 2013.1.8 (priority date)

2013.5.29- RFE mailed--> 2013.6.3 RFE arrives --> 2013.7.3 Forms mailed back to CIS via DHL--> 2013.7.5 CSC confirms receipt of evidence

2013.7.26- I129f approved! --> 2013.8.16- NVC confirms receipt of petition

2013.8.30- P3 arrives at fiancee's home --> 2013.9.8 P3 documents mailed to GUZ

2013.9.20- P4 email arrives

2013.10.25- Medical exam; 2013.10.28- Interview--> APPROVED!

2014.2.20- POE!; 2014.2.21- reunited in my hometown :)
