Carol, I've heard people saying sour cream instead of table cream, maybe they call it the wrong way?

I guess so, Laura... Because I had sour cream in Brasil b4 and I knew how it was... It really has that sour taste, not like the creme de leite...

Weird, 'cus once I made strognoff in US and I bought table cream in the can, and everyone looked, smelled, tasted and said "oh, it's sour cream". So maybe they call it sour cream but it's table cream.

Funny how an ingredient so widely used in Brasil is so unknown around here. True that here we have heavy cream and everyone uses that instead.

Laura, the only difference between the sour cream and the creme de leite that I've noticed (because they pretty much smell the same) is that the sour cream is sour , I know it sounds but the creme de leite is more ''neutro'', it is not ''azedinho'' like the sour cream.

e.. ontem fui no mercado so pra ver essa estoria toda... e achei o table cream que igualzinha a lata do nosso creme de leite... o sour cream que ja conheco e e realmente o nosso creme azedo...e tem o heavy cream que ainda nao testei...

O heavy cream é o creme de leite fresco, no Brasil ele é mais caro que o creme de leite em lata, e só receita mais chique pede ele no lugar da lata.

Acho que a vantagem de usar creme de leite fresco é que dá para esquentar no fogão que ele não talha como o creme de leite de lata. Só que a consistência é bem diferente, né? Tem coisa que tem usar o de lata senão fica aguado!!!

Verdade, mas o creme de leite em lata dá pra ser usado em receitas quentes se for acrescentado por último e não deixar ferver.

Right on Laura... Acho q tirar o soro tb ajuda a não talhar, mas tem q tomar cuidado pois o molho (ou o q seja) pode ficar bem grosso...

Whipping cream is heavy cream, that is, it hasn't been whipped yet.

Perhaps there's a regional difference and NE Brazil calls heavy cream "creme de leite?" without the fresco part?

I bought this whipping cream once, and it doesn't taste at all like our creme de leite. I found it close to the milk, on the cold part. It isn't similar to anything that I remember buying in Brazil, I can't compare to creme de leite, nor chantili, nor cream cheese, nor sour cream, anything. Para não jogar fora, eu usei para engrossar um molho que eu fiz 4 queijos e ficou bom.

And Carol I have to disagree, whipped cream is for sweet things like to put on the top of pies isn't it? Do you think it is similar to our creme de leite fresco? I don't think so. I think it is our chantili.
