I have a general question regarding my fiance's police certificate for the AOS process. My question is, will we need to submit a police certificate when filing the I-485 application? I haven't seen it mentioned anywhere that it must be, but I'm double checking since a cousin who's done this process has said to me yes.

No. You need it to show at the medical at Knightsbridge and then turn in at the visa interview. Knightsbridge doesn't keep it, so you don't need a separate one for them.
