This has been bugging me to no end, any help would be greatly appreciated. We've already married, are about to send off our permanent residence papers, but I have no idea when is a good time for her to apply for her social security card.

Does she apply in person at a local SS office?

Will she automatically get one due to filling out the work permit form?

yes, your now wife needs to go and apply in person. Normally, when a person arrives with a k1 visa can apply fir a SSN 2 weeks later, but you need to apply at least 3 weeks before her i94 expires. Otherwise, you need to wait for her EAD (work permit)

In my case I rather to wait to get my EAD, so I can get my SSN with my married name

Oh, wow. Really? I didn't know that. She would like to apply with her now married name, so if it's easier, when she receives her EAD, that would be the best time to go in to a SS office??

She could apply now in her maiden name, if she has at least 2 weeks left before her I-94 expires. Otherwise, she would have to wait for her EAD. She can go back and get the name changed on her SSN after she receives the EAD in her married name, or she can just wait for the EAD and apply for the SSN in her married name at that time.

You are supposed to be able to get the SSN in your married name by showing your marriage certificate, but often times the SSA workers tell you that that the names do not match what is in the system, you can't get it in your married name without something from USCIS in that name, or that you can't get an SSN with the K-1 since you already married. Some have even told people they need a K-3 or spousal visa since they married. Point is, SSA workers usually have no clue about immigration and spout of nonsense quite often. This is why getting it in the maiden name before the I-94 expires and changing it later, or waiting for the EAD and getting it in the married name right off the bat are the two easiest options.
