I'm in the process of filling out the info for my adjustment of status application. And I'm wondering if disability benefits (for the American citizen/my husband) is considered a form of welfare And would it endanger my chances of getting approved?

OP is filing adjustment of status not for a K-1 petition. Moved to adjustment of status forums from K-1 forums.

hey - pull out the I-134 that was filed for the K-1, and study what yer husband did, prior? might be some gems there ..

I am not sure if disability is a mean-tested benefit, but as long as the USC is the one receiving those benefits, it doesn't matter.

Quote from I-864 instructions on USCIS.gov

" Does Receipt of Means-Tested Public Benefits

Disqualify me From being a Sponsor?

No. Receipt of means-tested public benefits does not

disqualify anyone from being a sponsor. However, means-

tested public benefits cannot be accepted as income for the

purposes of meeting the income requirement."

So worst case scenario, your husband might need to have a joint sponsor fill out an I-864, but his receiving disability shouldn't negatively impact you as long as there is a joint sponsor to meet the income requirements.

Social Security Disability is income, not welfare. It is not means-tested and can be used as income on the I-864.
