Two First Names and Signature

My fiancee has two first names, which seems common in Vietnam. So her name on her passport is Last Name then Middle Name then Minh Hieu. Her family calls her Hieu. So in filing the paperwork, what should I put down as her first name? Should I write Minh Hieu, MinhHieu, Minh-Hieu or just Hieu?

And when she signs the paperwork, should she sign things the Vietnamese way with last name, middle name and then first name or should she sign it the US way with first name and then last name?

Timeline

If her full name Le Thi Minh Hieu, then put Minh Hieu T. Le (2 words first name). If named Le Minh Hieu, then Hieu M. Le (Hieu 1st name, Minh being M.I.).

Sign it in her own way, as long as it is true and consistent.

05-08-13: Case completed @ NVC per telephone call.

05-15-15: Case completed per email from NVC.

06-07-13: Rec'd email from NVC RE: interview date. (letter dated 06-05-13).

07-18-13: Interview date-- PASSED.

If her name is for example Nguyen Thi Minh Hieu, I would suggest that her first name be Hieu, Middle name Thi Minh. In American culture, if you write Minh Hieu Thi Nguyen, most likely, anywhere asking for ID, paperwork, whatever will be calling her Minh.

Another option is to hyphenate, Minh-Hieu, but I think that the other option is best. Of course, it also depends on what your wife wants.

I believe your example is correct in that the Embassy in HCM followed that naming convention on my sister-in-law's passport as well as my wife's. Both have the same name except the first so: Le Thi Hong N. and Le Thi Hong O. became: O. Thi Hong Le and N. Thi Hong Le on all the paperwork given to Homeland Security.
