We are in the process of waiting for the NOA2. Is there any benefit in sending more evidence? Since initially sending in the paper work we have had many visits, vacations, and engagement ceremonies.

Is there even a way to send in more?

Do not send anything unless they send an RFE asking for more.

Save anything new and bring it to the interview.

The spousal visa applicants wait till NVC requests the IV packet for them to include more evidence. You are K-1 and also going through canada( which is considered 'low fraud') so just bring whatever else you have to the interview just in case.
