Wife commission based job > $18k. Proof?

Hi all,

My wife (US citizen) graduated last year from college and was just offered a job that she starts next week and that will be paid way past the required $18k. Only problem is that because she is only about to start, she obviously doesn't have proof and only made something like $6-7k last year (part time as she was a student). To make things a little more tricky, the job is mostly commission based and fluctuates from $28-50k a year.

With my F1 visa expiring on April 5th (my OPT does run until Jan 10, 2014 though), I was wondering if you guys think I should still start the AOS process. Maybe I could bring proof of income to interview or they will request it later? My goal is to obviously get the process started before expiration of visa.

Adjustment of Status F1 Visa to Conditional Green Card

June 4th, 2013 - Filled for Adjustment of Status (F1 to Green Card).

June 5th, 2013 - USCIS received petition.

June 10th, 2013 - Received USCIS Acceptance Notification via text message and email.

July 10th, 2013 - Biometrics appointment.

August 22nd, 2013 - Received EAD card

July 31st, 2014 - Interview at Miami office - APPROVED

August 22nd, 2014 - Green Card received

Removal of Condition

May 11th, 2016 - Mailed out I-751 application

May 13th, 2016 - USCIS received I-751 application

Timeline

Easiest solution is to get a co sponsor.

What would a letter from her employer say?

Why get a co-sponsor when she actually meets the requirement and simply lacks proof?

Not quite sure what employer letter would say, but although it is commission based, there is a $10/hour base that puts here in the $20k/year area.
