Latest Tax Return copy for Affadavit of Support...

I am filing the I-864 using my income but because in 2011 and 2010 tax year I didn't have enough income to meet the poverty guideline, I am using my Uncle's income as we live in the same address. I haven't filed my 2012 taxes yet because I am waiting on ITIN for my wife so that we can file joint for me to claim education credits. In I-864, it asks for the 3 most recent federal tax returns, and I don't know if I can use the 2012 Tax that I will be mailing to IRS-ITIN office for ITIN approval. They said that since its peak times it can take anywhere from 8-10 weeks and I do not want to wait that long in order to send in the I-864. Can I just copy the 2012 tax return that I mailed to IRS-ITIN office and put that down as my most recent or should I use 2011, 2010, and 2009 tax returns?

They accepted my copy I sent in for taxes, but I also needed to include a W-2. Went through with no issues.

I gave a copy of my last tax return with W-2s and it was accepted as my transcript wasn't available yet

Thank you for the prompt replies. My uncle is co-sponsoring my wife and I am not sure if he needs to include W-2 of both his and his wife along with their joint tax return from 2011. Would just his W-2 suffice?
