My Fiance and I met in August and within these 6 months I've visited him in the Dominican Republic twice and we recently got engaged and decided he would move here. Im just worried his visa may get denied because our relationship is fairly new but we are most definitely in love. Im not sure if there is a minimum time a couple should or has to be together to start the K1 visa process???

There is not a minimum time a couple has to be together. But specific country's are a lot harder on short relationships when it comes to the interview.

Do you think the interview could go smoother if I attended it with him? Or it really wont make a difference?

That is country specific, some US embassys do not allow US citizen in and some do. You would have to check with the regional forum and ask what their experience was.
