Here is an attempt at my cornbread dressing recipe. LOL I am bad about cooking and not using a recipe and go by feel on alot of my dishes. Only baked pies, cakes, etc do I use recipes.

I make a large pan of cornbread and let it cool.

Cornbread

2 Cups of Martha White Self Rising Corn Meal Mix

1 1/3 cups Buttermilk

1 beaten egg

1/4 cup of oil or melted shortening

Heat oven to 450 degrees and add oil/shortening to 9" skillet and heat in oven. In large bowl mix all other ingredients and then pour batter in hot oiled pan. Bake 20 to 25 minutes or until done.

Mary's Cornbread Dressing

Make cornbread recipe above and cool.

Take a small cooking hen and boil in pan with boullion and onions, celery, salt and pepper. Take out of pan and cool until you can pull the meat from the carcass.

Take in a non stick skilled 4 ribs of celery and one large onion and saute in 3 tablespoons of margarine and season with salt and pepper to taste. Let cool until you can mix with hands.

Now take the cornbread, chicken meat and veggies and put in large mixing bowl.

Take the cooled liquid from cooking your chicken and use it to mix into the dry ingredients until it is damp but not too wet. I also add about 1/2 cup of chopped pecans to the mixture. Poultry seasonings and sage to taste and then bake in the oven until warmed thru and thru. You can make it the day before and then put it in the oven about 45 minutes before you wish to serve and it will be reheated and ready for serving.

I save the remaining stock from cooking the chicken and make homemade gravy with the turkey drippings and any leftover chicken meat can be used in a casserole or for chicken tacos or roll ups.

this is almost the same as the way i do it... i learned from my mom, who learned from her mom... guess its just the alabama way ;)

ppl tell me that im nuts for making my own broth, but theres just nothing like it... just like cornbread is just not right unless its made with buttermilk... i do just about exactly what you do, but add carrots too... my mom sometimes adds apples, but i dont care for that

i dont like cranberries, but i make a relish for everyone else... i use a recipe that i got from emeril many years ago... i cant find it now, so i just guesstimate... very simply, you put a package of fresh cranberries into a pot with some orange marmalade, honey and brown sugar... cover it and let it simmer... you hear the cranberries popping... everyone thats tried it LOVES it

thanksgiving is very important to me because of how our family comes together...

our menu for tomorrow:

Turkey (rubbed down with oil and garlic, sage, oregano, salt & pepper - then wrapped to soak up those seasonings overnight in the fridge {yes, inside the cavity and under the skin of the breast} - then just before we put it in the oven, we inject it with seasonings as well)

Dressing (see above)

Mashed potatoes (fresh and mashed with butter, milk, garlic and chives)

Squash casserole (yellow squash with onions, cheese, crackers and an egg)

Green bean casserole (we use either cream of onion or cream of chicken soup instead of mushroom)

Cranberry relish (see above)

Gravy (use the rest of the broth that wasnt used in the dressing - unbeatable flavor)

Crescent Rolls

Yams (simmered with brownsugar and cinnamon - still in chunks)

Devilled eggs (mustard, fat free mayo, sweet pickle cubes, salt, pepper, and paprika)

Sweet & Unsweet tea

then dessert is:

pumpkin pies with whip cream

sugar cookies and snickerdoodles

chocolate chip chunk cookies

peanut butter cookies with chocolate chips

i also usually arrange some flowers in a pumpkin shell for the centerpiece, but didnt find the right size & shape this year... so they are in a regular glass bowl vase

i get a lot of it done the night before (the casseroles & dressing put together, seasoning the turkey, making the pies) so its not much work on the day of... we get to enjoy time together, catch some of the parade and then after we eat, we put up the christmas tree and watch 'a christmas story'

Well, one last post to this thread since I happen to be browsing and it's officially Turkey Day! 12:01! :P Happy Thanksgiving everyone! I hope you all have a wonderful day...and for those of you apart, I hope it's your last one and you'll be with your honeys next year. (F)

I didn't get to brine the bird after all...well, I could have, but I never got a big enough container to put it in, and we ended up with a 20 pound turkey!!! Turns out I *am* going to be doing all of the cooking tomorrow, but we're having the actual dinner at my mom and dad's house. They just have a lot more room there, and more matching servings for dishes, more platters, things like that....so, that's the plan. We're going over about 10am to cook and planning to eat about 4. It's been fun reading about everyone's plans here! I *am* going to try the brining thing for sure at Christmas time. We always have ham, but I make turkey for Craig too since that's the UK thing.

Everyone's recipes sound really good...I'm going to try that cranberry relish since it's so easy...cran, sugar and orange zest..I think I can handle THAT! :lol: Other than that we're just doing the norm..mashed taters and gravy, sweet potato casserole, (with a different topping than I've tried before though..it's got the brown sugar, butter, something else, and oatmeal...hmmm. we'll see.) apple crisp, pumplin pie, stuffing, and my family insisted on the jellied cranberry from the can! :lol: It's alright...I like it too. Anyway...have a really happy day and remember...we're all on this site for a reason, so we all have something to be pretty thankful for! :)(F) M.

Ok the cookies taste wonderful but I am so horrible at "dropping" them. I tried using a pastry bag but that was a failure :whistle:

Yes yes, I know, I suck at cooking/baking/dropping cookies onto cookie sheets. :P

Anyway, aesthetically the cookies are a major failure. Taste-wise, NUM!!!

Oh and please don't ask me why I'm up at 2 in the morning baking cookies.

My chocolate pumpkin cookies never looked like anything other than little rocks. Their consistency doesn't lend itself to aesthetic. ;)

I know my hubby prolly will... I made banana chocolate chip cookies the other day and hubby and I basically finished off a container of them in one sitting :whistle:

and the recipe is... ??

I have bananas I need to use up. ;)

Here is the recipe..... I found it online because I couldn't find my other recipe.... but it came out quite good.. they taste better the next day....

Banana Chocolate Chip Cookies

Ingredients:

1 cup mashed bananas

1 cup packed brown sugar

1/2 cup granulated sugar

1/2 cup butter -- softened

1/2 cup shortening -- softened

1 teaspoon baking powder

1 whole egg

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

12 ounces semisweet chocolate chips

3 1/2 cups all-purpose flour

1 teaspoon vanilla extract

1/4 teaspoon salt

Directions:

Heat oven to 350 F.

In a large bowl mix butter & shortening until smooth, then add brown sugar & white sugar and beat until mixed and then add the bananas, vanilla extract, and egg and beat until light and fluffy. Sift flour, baking soda, cinnamon, salt and nutmeg together. Add to wet mixture and mix thoroughly. Add chocolate chips and mix well. Drop by rounded tablespoons onto ;oghtly greased cookie sheets or you can use parchment paper. Bake for about 8 or 9 minutes and just starting to brown. Cool 1 to 2 minutes on cookie sheet and then remove to racks.

I have noticed that a lot of recipes down here say to bake cookies for 15 minutes at 350 F... :o I bake mine for about 8 or 9 minutes, any longer and they would burn....

Ok, so I'm making progress. So far I have made:

Stuffing (It came out delish!!!!)

Cranberry Relish

Yams

Mashed Potatoes (I make them one day ahead and then bake them like a casserole and they are brown and crispy on top, DIVINE)

Cleaned the green beans

Turkey is ready to go

Keltic, I see you down there...how much orange marmalade and brown sugar do you use? :) M.

im not good with measurements, i just freehand it... but i would guess around 1/4 cup of marmalade (this year i am using tangelo marmalade)... then a spoon or 2 of brown sugar... if i get it too sweet, i add some lemon juice and zest to get just a touch of the tart back

I got a few hours in last night.

I made:

- hot spinach and artichoke dip

- oyster crackers mix

- banana cream pie (I'm not sure how that turned out though, it seems a bit too gooey?)

- spiderweb pumpkin cheesecake

- fumi fumi salad

- broccoli casserole

- scalopped corn

And that's it.

I'm ready to go over to my in-laws now. I think we're going to have around 30 people there. :unsure:

Question: the broccoli stuff has crushed crackers up top, should I heat it up in the microwave or is that a big no-no?

heated in a microwave the steam would make the crakers mushy.....best find some oven time for it.

:lol: Charles! Thanks Keltic...I didn't see this until later, so I used the one earier in the thread..and it was yummy! Some of my fam(including me!) love the regular old jellied from the can, so we had that too...I cooked at my Mom/Dad's for over five hours and it was YUMMY...was proud of myself as I've never really done a big huge dinner on my own before(Mom usually cooks Thanksgiving..wanted her to have a bit of a break..she just had hunters in the house all last weekend...deer season)...was going to have it here, but place is way smaller than my parents, so just brought everything there and cooked. Plus, they have a Nesco I used, so that freed up the oven for everything else! It was great, and we're all still so full at after 11pm!! I only had 1 (huge, though!) plate, but it's just something about turkey, I tell ya!! Hope everyone had a fantastic day...now I'm bummed because I have no more reasons to put off my big ol' business report and oral presentation that are due in my Business Communications class this Tuesday... :(
