Chocolate Pumpkin Cookies

1/2 cup butter or margarine

1 cup sugar

2 each eggs

1 cup cooked and mashed pumpkin

1 teaspoon vanilla

2 cups flour

1/3 cup cocoa

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1. Preheat oven to 350 F.

2. Cream together butter and sugar. Add eggs, pumpkin, and vanilla and blend well.

2. Stir in flour, cocoa, baking soda, salt, and cinnamon.

3. Drop batter by spoonfuls onto greased baking sheet (I use parchment paper instead).

4. Bake at 350F for 15 minutes.

will have to give those a try one day :thumbs:

I don't have mashed pumpkin though. :( How's canned pumpkin? :unsure:

Canned pumpkin is all I ever used with this recipe. It's perfect as far as I'm concerned. :lol:

I know my hubby prolly will... I made banana chocolate chip cookies the other day and hubby and I basically finished off a container of them in one sitting :whistle:

Ok the cookies taste wonderful but I am so horrible at "dropping" them. I tried using a pastry bag but that was a failure :whistle:

Yes yes, I know, I suck at cooking/baking/dropping cookies onto cookie sheets. :P

Anyway, aesthetically the cookies are a major failure. Taste-wise, NUM!!!

Oh and please don't ask me why I'm up at 2 in the morning baking cookies.

Here is the recipe..... I found it online because I couldn't find my other recipe.... but it came out quite good.. they taste better the next day....

Banana Chocolate Chip Cookies

Ingredients:

1 cup mashed bananas

1 cup packed brown sugar

1/2 cup granulated sugar

1/2 cup butter -- softened

1/2 cup shortening -- softened

1 teaspoon baking powder

1 whole egg

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

12 ounces semisweet chocolate chips

3 1/2 cups all-purpose flour

1 teaspoon vanilla extract

1/4 teaspoon salt

Directions:

Heat oven to 350 F.

In a large bowl mix butter & shortening until smooth, then add brown sugar & white sugar and beat until mixed and then add the bananas, vanilla extract, and egg and beat until light and fluffy. Sift flour, baking soda, cinnamon, salt and nutmeg together. Add to wet mixture and mix thoroughly. Add chocolate chips and mix well. Drop by rounded tablespoons onto ;oghtly greased cookie sheets or you can use parchment paper. Bake for about 8 or 9 minutes and just starting to brown. Cool 1 to 2 minutes on cookie sheet and then remove to racks.

I have noticed that a lot of recipes down here say to bake cookies for 15 minutes at 350 F... :o I bake mine for about 8 or 9 minutes, any longer and they would burn....

Pumpkin Gooey Butter Cakes Recipe (Paula Deen)

Cake:

1 (18 1/4-ounce) package yellow cake mix

1 egg

8 tablespoons butter, melted

Filling:

1 (8-ounce) package cream cheese, softened

1 (15-ounce) can pumpkin

3 eggs

1 teaspoon vanilla

8 tablespoons butter, melted

1 (16-ounce) box powdered sugar

1 teaspoon cinnamon

1 teaspoon nutmeg

Preheat oven to 350 degrees F.

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

Serve with fresh whipped cream.

Variations: For a Pineapple Gooey Cake: Instead of the pumpkin, add a drained 20-ounce can of crushed pineapple to the cream cheese filling. Proceed as directed above.

For a Banana Gooey Cake: Prepare cream cheese filling as directed, beating in 2 ripe bananas instead of the pumpkin. Proceed as directed above.

For a Peanut Butter Gooey Cake: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of the pumpkin. Proceed as directed above.

people people people....what....no green bean casserole???????

btw during the week when I'm in a pinch I do use the boxed mashed potatoes. The trick for me is to add cream cheese to it and you can't really tell that much that it's from a box.

So..... who's soakin'/brinin' the turkey ?

I have mine going with lots of herbs from the garden -- sage, rosemary, thyme, Mexican oregano.

B)

I have never brined my turkey and it comes out really juicy.

1.I smother it with about a pound of butter inside, outside, and under the skin.

2. I never stuff the bird because it takes longer to cook and that's makes it dry. Instead I stuff it with onion, apple, orange, herbs, garlic, etc.

3. I put it in the oven breast side up for 30 minutes at 500 degrees. This browns all the skin. Then I cover the breast and top of the legs with foil and cook at a lower temp until done. Perfect everytime thanks to Alton Brown. :thumbs:

Excellent !! :thumbs: I roast mine much the same way -- I stuff with herbs, onions and apples, and cook at 550 for half an hour.... then cover and lower oven to 350 for 2 1/2 or 3 hours. (My oven runs kind of cool.)

I've brushed with butter many times, but never a whole pound :blink:

Anywayyy --- it's soaking in the salt & herbs now. I plan on having it in the oven tomorrow morning by 8:30 am...

Well when its in solid form, you need alot butter. Oh, I forgot to mention that I baste it regularly too (20 min). I don't start cooking my bird til about 2:30 p.m., we eat at 6:00 p.m. or so.
