Well, it seems like me and hubby might end up spending this Thanksgiving by ourselves, or maybe with just a friend or two at the most. But if it's really going to be just us two, I'm not going to bake a huge turkey, I was thinking more of just a chicken with the traditional stuffing/side dishes (hubby doesn't like turkey that much anyway).

If that's going to be the case, do you guys think I can still brine the chicken and follow the same recipe as for the turkey? I just really love the idea of the overnight brine, it sounds so yummy! :thumbs:

Any idea will be greatly appreciated! (F)

Well, I'm going to try that spiderweb pumpkin cheesecake just because it looks awesome. I hope I can get it to look and taste good.

Other than that, I'll probably just make a veggie side dish and my infamous hot spinach and artichoke dip. :P

A banana cream pie for David and that's about it for me for this Thanksgiving. Mom-in-law is in charge of the big bird. :D

Joel and I are having a turkey breast, green bean casserole (I know I know, EVERYONE makes it, but I really do like it!), his grandmére's stuffing recipe, sweet potato casserole, REAL mashed taters, crescent rolls, and a Georgia Pecan Pie with whipped topping for dessert. I am guessing our daughter will only want the dessert. ;)

This year I'm going to attempt to get pie crust to work; it hasn't since I've been here so it's pumpkin pie if it works, spiced pumpkin cheesecake if it doesn't. ;)

Brining the turkey tomorrow. My boss told me to work from home. Not much work either. :lol:

(And now I want a banana cream pie.)

What is the big deal about making mashed potato? Is it that people don't like to peel them? It's not exactly difficult. It would totally ruin the meal if someone gave me fake spuds.

I have made pumpkin chocolate chip cookies before... they were really good.... :thumbs: It does sound a little strange but it is good...

I have a recipe for a pumpkin cocoa cookie that is divine...very soft. When I get home I'll see if I can find it...I like it better than the pumpkin chocolate chip ones and I really really like those. :)

Chocolate Pumpkin Cookies

1/2 cup butter or margarine

1 cup sugar

2 each eggs

1 cup cooked and mashed pumpkin

1 teaspoon vanilla

2 cups flour

1/3 cup cocoa

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1. Preheat oven to 350 F.

2. Cream together butter and sugar. Add eggs, pumpkin, and vanilla and blend well.

2. Stir in flour, cocoa, baking soda, salt, and cinnamon.

3. Drop batter by spoonfuls onto greased baking sheet (I use parchment paper instead).

4. Bake at 350F for 15 minutes.
