I'm soon going to have the interview at the embassy and I would like to know if the consul will verify the dates of trips listed on the application? I have all documents supporting my permanency; but there is a weekend trip(two days), for which i dont have the exact dates and I wont put it on the applciation. will they double check or verify if there is a missing date listed?

I would assume anything is possible, include the trip they will understand that you might not be able to remember each and every time you have entered and exited the U.S just complete the form to the best of your knowledge.

ur passport or ur hubby's passport stamped pages will be the best documents to present to show the trip...if u don't have the original passport...you could ask ur hubby to photo copy it and it should be notarized in any US notary services
