So I'm screwed no matter what I try to do..

Uh, frankly I'm inclined to agree with you.

Your spouse to be, as you paint the picture here doesn't seem to have the ability to even support himself transiently. This fact alone makes me wonder about the viability of the relationship.

Last I knew Canada's economic situation vis a vis employment was better than the US. Yes, it's difficult to get a job in the US but if a person's willing to stock Grocery store shelves between 11pm and 6AM there are jobs almost everywhere. So I'll side with those who say: "get a job." And I don't buy the small town, no job point of view--move to a nearby larger city.

Where there's a will, there's a way, and by the way, might I ask, why is he not making any posts giving his feelings on the situation?

Of course! I'd never have him overstay. I wouldn't risk our future in such a way, we're doing everything legally.

I'm just trying to figure out at which point he's allowed to stay in the U.S for the rest of the application processing with me.

I would wait 6 or 7 months before starting his 6 month stay with you, or don't tell his parents yet and hope your wait time is shorter. He (and you) will have to return to Canada for his interview, then wait there until getting the k-1 visa stamp in his passport. They may take away his passport (and tourist visa) at the interview until they can update his visa. I don't know how it is in Canada, but in the Dominican Rep, they take your passport from you for a week or so.

Waiting a few months into the K1 processing before you move back is a good idea- file now!

Another option, since your fiance stopped his education, would be for him to get a job, and find a room-mate situation for a few months. I would recommend this, because remember there is ni way of knowing exactly how long processing takes, there is the interval between medical and interview to consider, and he won;t get the visa at interview- they will keep his passport to put the visa in, and he will get it back in the post a couple of weeks later.

I agree whole-heartedly with this. I think this is the best solution. It could be at least 7-9 months before he is even allowed to enter the US on a K-1. I would think there would be some job where he lives -it might not be the hours he wants or the work he wants to do, but look at the big picture - if this is what you both want - sometimes we have to do things we don't want to do or deal with things we'd rather not in order to get to the good stuff.

All the best on your visa journey and I hope it works out for you both!
