So my fiance and I decided to wait and that we do not want to get married yet (maybe next year)

What is the likelihood of me being able to visit him on a B2 visa?

I do have a job and strong family ties and a permanent place to stay when I return.

My fiance will write a letter inviting me and I will sign a document saying I will return to my country.

What are the chances of my B2 being accepted and that I wont get refused at my POE?

It depends up to many factors: Your home country, age, job type, etc etc.

Since none of us know your background, we cant give what are the chances to get approval for B1/B2 visa. You can try to apply one, even you are denied, it won't effect in future for your immigrant visa if you guys ever apply for that.

You can try and just see what happens. No one can tell you what the chances are it will or won't work. If you don't succeed then it's only lost money (provided you're 100% honest and don't misrepresent yourself in any way).
