We received out NOA2 on January 2 and received the email for the packet 3.5 on January 22. My fiancé is in the process of obtaining all the documents needed to send back to the embassy, but we were wondering since we got the NOA2 on January 2 and it's only good for 4 months then does the interview have to be before May 2? We are worried that we won't get an interview date before May 2 since we are still gathering papers.

No the interview does not have to be on or before May 2nd.

You are already at the interview prep stage, there is no reason to worry or rush. Forget about the expiration date on the NOA2 it is not important at this stage.

AOS was approved in 2 months and 8 days without interview.

Hi im not trying to scare you but you might want to read this thread and hope that they can give you a interview date before your expiration date , this person from pakistan got denied because his petition was expire...http://www.visajourney.com/forums/topic/410832-important-note/page__p__5937602#entry5937602
