How close was the milk to expiring when you froze it? That could be part of the problem. If it is right at the time of expiring, it could just take long enough during the freezing and thawing process that it actually does go off. If you are going to freeze milk it should be relatively fresh so that when it is thawed out, it still has a good deal of 'freshness' left on it. The 'yellow' eventually remixes back with the milk - it is the separation of the milk fat from the water - they freeze at different rates if they separate- which is more likely to happen if the milk is close to expiring.

Romaine lettuce is great for salads, or for putting on sandwiches of any type - meat, egg, etc. Try making up a taco filling and then wrapping them in a large Romaine lettuce leaf instead - quite tasty and definitely saves on calories and fats. You'll probably eat more than you would if they were the regular tacos or wraps.

I've added it chopped up fine to soups and stews when I have wanted something more green in it and don't have it, but I generally like the taste of Romaine in a salad so will often just keep having a salad until the Romaine is used up. I have heard of people grilling it - sauteing it with butter and garlic and such - but I've never done that.

Romaine also tends to keep fairly well so you don't have to worry about using it all up in a few days or a week.

i froze the milk the day before sellby so it had quite a few days left on it.

it didnt taste or smell sour, just tasted icky.
